Bonda is my all time favourite snack which can be prepared in less than 15 minutes. It's a nice accompaniment for tea.
Ingredients
Besan Powder / Gram Flour: 2 cups
Onion: 2; roughly chopped
Green chillis: 3; finely chopped (adjust as per your taste)
Salt: as per taste
Ginger: 1” piece; finely grated
Coriander Leaves: 2 springs; finely chopped
Curry Leaves: 1 teaspoon finely chopped leaves
Mint Leaves: 1 teaspoon finely chopped leaved (Optional)
Baking Powder: 1 big pinch
Water: 1-2 cups
Oil: to deep fry
Instructions
1. Mix besan powder, chopped onions, coriander leaves, mint leaves, curry leaves and green chillis, grated ginger, salt and baking powder with sufficient amount of water.
2. Heat oil in a heavy bottom wok. Once oil is piping hot, drop the bonda batter with a big spoon and fry till they are golden brown.
3. Scoop the bondas onto a tissue paper. Serve hot with any pickle, chutney or ketchup of your choice.
