I first tasted this dish in my school canteen and tried it at home. Our school vendor also prepares it with crab stick which I want to try soon. I tweaked her recipe a bit to cater to our taste by adding onions, chilli and pepper powder. It was a hit with my 3.5 yr old daughter, who loves both chicken franks and egg. I personally like it with chapati and roti. Vendors in economic rice stalls here in Singapore serve it with rice as a side dish.
Ingredients
Eggs: 4
Chicken Franks: 3-4; dice into required shape
Onions: 2, finely chopped
Green chillis: 3-4, finely chopped
Pepper Powder: 1/4 teaspoon
Salt: To taste
Oil: 3 tablespoons
Instructions
1. In a vessel, beat eggs with salt and pepper powder until there are bubbles.
2. Heat oil in the pan and add chopped onions, green chillies and saute until translucent.
3. Add the diced chicken franks and fry until lightly browned.
4. Add the beaten eggs and stir fry thoroughly. Remove from heat and serve hot with chapati, roti or steamed white rice.
Note: You can also use sausages or hotdogs in place of franks.
